Roasted Pears In Caramel SauceDescription: Freshly chosen pears (Bartlett, Bosc or Anjou) that are ripe and not too firm are used as a delicious first course at our breakfast table. Ingredients: 4 TBS. butter 3/4 cup Packed brown sugar 4 Pears, halved & cored 1/2 cup sour cream(if using for dessert) 1/4 cup coarsely chopped nuts (pistachios, walnuts, pecans) It calls for them to be toasted but I never bothered a dollop of sour cream Directions: Adjust the oven rack to center position and heat oven to 400 degrees. Melt butter in microwave (or place butter in a baking pan large enough to hold the pears in a single layer; set in heated oven until butter melts). Sprinkle sugar over melted butter; then place pears, cut side down, on top. Bake until tender about 30 minutes. Poke with a cake tester. Remove pan from oven, turn over pears and baste with pan sauce. Return to oven, bake until golden brown and glossy. About 10 minutes. Let cool slightly before serving. Transfer pears to dessert dishes. (Top with a dollop of sour cream) Drizzle with caramel sauce from the pan. Sprinkle with nuts and serve.
