Signature Pineapple Pudding

Breakfast at Tiffany Hill: Experience the Dream Cookbook features this Southern Bread Pudding Desert we serve as part of our three course breakfast.

1 stick butter
3 eggs
dash of salt
1 cup sugar
1/2 cup milk
1 can pineapple chunks, drained
8 slices of white bread (crust removed and cubed)

Preheat oven to 350 degrees. Melt butter and let cool. In a mixing bowl, beat eggs well. Next, add sugar, milk and salt, and then add the pineapple and butter. Add cubed bread and mix until well coated. Pour mixture into a 1 1/2 quart casserole dish and bake for 30 minutes.
