Soupe A L'Oignon Gratinée (french Onion Soup)Description: We use the richest wine, the earthiest meat stock and the best quality onions melted in butter. We top this old classic with imported Gruyère cheese to offer the perfect "gratiné" Ingredients: 3 Tbsp. oil 2 Tbsp. butter 10-12 onions 1 cup herbs de Provence 1 Tbsp. sugar 4 cups white wine 2 Tbsp. chicken base 3 cups water 8 cups meat stock Salt and white pepper to taste Crostini Gruyère Cheese Directions: 1) Caramelize onions in oil, butter and 3 cups of water, on low heat (adding 3 tsp. of salt and 1 Tbsp. of sugar to onions). 2) Add herbs, stir in wine. 3) Reduce by half. 4) Stir in chicken base. Stir and bring to boil. 5) Add meat stock, bring back to a boil, simmer adjust salt & pepper. Top with crostini & Gruyère cheese and lightly brown to melt.
