Spiced Apple Pancakes Crowned With Cinnamon Streusel Ice Cream

Description: The healthy ingredients in this pancake become decadent when topped with the Cinnamon Streusel Ice Cream! Ingredients: Spiced Apples: 2 Granny Smith Apples 1/4 tsp. Cinnamon 1/4 c. Sugar 2 TBSP. Butter 1/4 tsp. Nutmeg 1/8 tsp. Ground Cloves Pancakes: 1 c. All-Purpose Flour 1/2 tsp. Baking Soda 1/4 tsp. Salt 1/2 c. Cornmeal 1/4 c. Oat Bran 1 Beaten Egg 1 1/2 c. Milk 1/2 c. spiced apples mixture 2 TBSP. Butter 2 tsp. Honey Breyers Fried Ice Cream-Cinnamon Caramel with Cinnamon Tostada Pieces Directions: Spiced Apples: Place peeled and sliced apples in saucepan and add spices. Simmer for 10-15 minutes. Mash with potato masher Pancakes: In a large bowl, mix flour, soda, and salt. Stir in cornmeal and oat bran. In another bowl, stir together egg, milk, 1/2 c. spiced apples, butter, and honey. Stir until mixed. Heat griddle to 300 degrees and brush griddle with cooking oil. Pour about 1/4 cup batter, for each pancake, onto griddle and cook until golden brown. Serve with 2 scoops of Fried Ice Cream and syrup on top! Makes 12 pancakes. NOTE: If you can't find the Fried Ice Cream, use Breyers Coffee Ice Cream!
