Spiced Melon Balls

Description: Wonderful dish in the summer when melons are at their peak! Ingredients: 1 ripe cantaloupe 1 ripe honeydew 1/2 teaspoon salt 1 teaspoon ground coriander 1/4 teaspoon cayenne, or to taste 1 tablespoon very finely minced cilantro leaves 2 tablespoons freshly squeezed lime juice Sugar to taste (optional) Directions: Use a melon baller to remove all the flesh from the melons. Combine the balls in a bowl with salt, coriander, cayenne, and lime juice. Taste and adjust seasoning: you may add more of anything. If the melon is not sufficiently sweet, add a bit of sugar. Cover and refrigerate until ready to serve, up to 2 hours.
