Strawberry-rhubarb Cobbler

A delicious start to the day, or a great dessert. Makes 10 ramekins, or one pan 7.5" x 10.5" Ingredients: For filling: 3 c. rhubarb, chopped 3 c. strawberries, chopped 3 Tbsp water 1/2 c sugar (more or less) 1 Tbsp grated orange peel 1 stick cinnamon For Dough: 1 3/4 c flour 1/2 tsp salt 3 tsp baking powder 1 Tbsp sugar 6 Tbsp room temperature butter or margarine 3/4 c milk Directions: Put fruit, water, sugar, orange peel & cinnamon stick in covered pot & bring to simmer. Rhubarb will gradually dissolve. If you like chunks, don't cook too long. Taste and add sugar if needed. Remove cinnamon stick. Meanwhile, preheat oven to 350. To make dough, mix together the dry ingredients. Cut in butter or margarine. When well blended, pour in milk all at once and stir together quickly. A few lumps are okay. Fill ramekins with fruit; top with dough (don't seal to edge – leave rough). Can sprinkle with a bit of sugar crystals or cinnamon & sugar. Bake for 20-25 Minutes at 350 - convection is best.
