Swedish Almond Cherry Tarts

These are a dainty filled cookie shell. On your Christmas smorgasbord table, they are pretty as a picture.

1 cup butter
1/2 cup sugar
2 egg yolks

2 cups flour

2 tablespoons maraschino cherry sirup
1 tablespoon lemon juice
2 egg whites
1 cup sugar
1 1/2 cups blanched almonds

Cream first three ingredients by hand or in a mixer.

Add the 2 cups of flour and mix until smooth.
Set aside.

Place the last five ingredients in a blender container. Blend until almonds are ground fine. Press portions of cookie dough into little fluted cookie-tart pans ( 2 1/4 " diameter) to line them. Put a teaspoonful of the blender mixture into each and top with maraschino cherries cut in half.

Bake the tarts at 350 degrees for 18 to 20 minutes or until browned. Cool and remove from pans (they'll slide out easily if you turn them upside down on a cake rack and tap them lightly).
