The Captain's Belgium Waffles



Description:
Belgium Waffles with fresh berries, fresh whipped cream and pur maple syrup

Ingredients:
FOR WAFFLES
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
2 cups milk
1 teaspoon vanilla extract
4 tablespoons butter, melted
FOR WHIPPED CREAM
1 pint heavy or whipping cream
3 Tablespoons sugar
1/2 teaspoons vanilla
FOR TOPPING
1 Pint strawberries
2 TABLESPOONS BROWN SUGAR
1/2 CUP WATER
ANY OTHER BERRIES YOU LIKE
ALSO, DON'T FORGET THE PURE VERMONT MAPLE SYRUP!

Directions:
First, Whip fresh heavy cream with 3TBL sugar and 1/2 tsp of vanilla until thick. Store in fridge. Slice up Strawberries and add a bit of brown sugar and water and set aside. Prepare any other berries you would like to add as a topping. Then, preheat your waffle iron. In one bowl sift together flour, baking powder, and salt. Set aside. In a second bowl beat together the egg yolks and sugar until sugar is completely dissolved. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Then fold the egg whites into the waffle batter. Coat the waffle iron with non-stick cooking spray before cooking. Cook until golden and place on plate and spoon on strawberries with brown sugar syrup, add any other fruit you may like, top with fresh whipped cream and serve with warm pure maple syrup. Enjoy!
