Tropical Fruit Salad With Vanilla Bean

1/2 cup diced kiwi
1/2 cup diced strawberries
1/2 cup mandarin oranges
1/2 cup pineapple tidbits
1 tablespoon vanilla bean paste
1/2 teaspoon dried mint leaves, or 2 tablespoons chopped mint leaves
6 whole kiwis

To make the kiwi cups, cut a thin slice off of the bottom of the kiwi so they can stand on end. Then slice approximately 1/4 inch off the top of the kiwi. Cut the flesh from the inside of the kiwi, using a small spoon to scoop it out. Reserve the kiwi fruit for the salad.

Dice the kiwi and strawberries and place it in a large bowl. Add the mandarin oranges and pineapple tidbits, as well as the vanilla bean paste and mint. Gently toss the mixture. Fill the kiwi shells with the fruit salad.
