Turkey Fritters with Herb Dressing and Cranberry Cole SlawIngredients: Turkey Fritters ½ turkey breast – cooked and shredded ¼ cup mayonnaise 1 tbl cream cheese 1 tbl green onion 1 tbl parsley 1 small shallot, diced 1 garlic clove, minced 1 egg Breadcrumbs (just enough to hold patty to shape) Canola or vegetable oil Salt and pepper to taste Herb Dressing 3 tbl of buttermilk ¼ cup of plain yogurt 1 tsp of parsley 1 tsp of thyme 1 tsp of chives Salt and pepper to taste Cranberry Cole Slaw ½ head of purple or green cabbage Handful of cranberries 1 bulb of fennel 1 small shallot Cole Slaw Dressing ½ cup of apple cider ¼ cup of mayonnaise 1 tbl sugar Directions: Turkey Fritters Mix everything except egg. Add salt and pepper, as preferred. Once seasonings are evenly distributed, add egg and mix well. Heat skillet on medium heat with enough canola or vegetable oil to cook bottom of skillet. Form patties (about 2 inches in diameter) and cook until golden brown on both sides. Put patties on sheet pan and put in oven for 375° for 3 min, just to cook the patties all the way through. Herb Dressing 1. Mix ingredients together until even and smooth. Cranberry Cole Slaw with Cole Slaw Dressing Thinly slice cabbage, fennel and shallot. Mix apple cider vinegar, mayo and sugar into a separate bowl. Toss slaw with dressing and cranberries ½ hour before serving. Recipe Summary: Comments: |
