1 Egg Omelets

Description:
Enjoy the rustic simplicity of Kinni Creek Lodge on 180 feet of the Kinnickinnic River with 3 rooms named for the "Kinni", outfitted with log furniture, private baths, tv/vcr's, fireplaces & robes. Flyfish, rent a canoe/kayak, relax in the Ice House.

Ingredients:
2 TBSP olive oil
5 cloves of garlic minced
1 small onion minced
1 LB ham cubes
1 medium zuchinni minced
extra large eggs
Pam spray
sliced tomato
shredded cheese
chives, minced

Directions:
In a medium fry pan add the olive oil, garlic, onion, ham, zucchini, sauté on medium for 3-5 minutes. Remove from heat, set aside.
Pre-heat another medium fry pan on medium-high heat, spray pan with Pam. Beat an extra large egg and pour into pan then swirl around to cover entire pan.
Take a large serving spoonful of mixed ingredients and spread in the middle of the egg while it is finishing cooking. Fold sides of egg over ingredients, slide out of pan onto plate.
Decorate with sliced tomatoes, shredded cheese and chives.
