Apricot Parfait Pie

Description: An easy to make fast surprisingly tasty dessert and very often requested here at the Uncompahgre Inn for luncheons that I cater. Ingredients: 1 pre-baked 9 inch pie shell (see ginger-pecan shell for example) 1 small package Lemon Jello 1 pint vanilla ice cream 1 15 oz can apricots, drained and cut up; save the juice. Directions: Baked pie shell(cooled). Heat to boiling 1 cup reserved apricot juice, adding water if necessary. Pour on Jello in mixing bowl, mix and dissolve Let cool about 15 minutes Add softened vanilla ice cream. Mix in mixer until combined Let cool until slightly congealed. Add cut up apricots. Mix in. Pour into cooled pie shell. Refrigerate for two hours or until firm. Serve with whipped cream and chocolate curls.
