Asparagus, Goat Cheese And Chive Frittata
Description:
A tasty and quick breakfast entree which can be served warm or at room temperature Ingredients: 8 large eggs, beaten 1/2 tsp each, salt and fesh ground pepper 1 tbls olive oil 1 lb. asparagus stalks, trimmed, cooked and cut into 2 inch pieces 1 cup red onion chopped 1/2 cup goat cheese, crumbled 2 tbls fresh chive chopped into small rings Directions: Pre-heat oven to 400 degrees. Combine eggs,salt and pepper in medium bowl. Heat oil in an oven proof 10 inch skillet over medium-high heat. Saute asparagus and onion until onion is soft, but asparagus is still crisp. POur egg mixture into pan and cook until bottom begins to set, about 2-3 minutes. Sprinkle goat cheese and chives on top and place in oven and cook until eggs are set in the middle, about 18-20 minutes. Let cool, invert onto a platter or cut into wedges and serve from the pan garnished with more chives.
