Baked Oatmeal

This warm and tasty dish is a great side to your scrambled eggs, or just by itself. Top with warm syrup and a little milk for an added treat.

1/4 cup oil
1 cup milk
2 eggs
2/3 cups brown sugar
2 1/2 cups oatmeal
1 tsp cinnamon
1 tsp salt
2 tsp baking powder

optional: 1/2 cup chocolate chips, raisins, or 1 chopped apple, 1 cup blueberries, or a combination of things

Preheat oven to 350. Lightly spray 8 x 8 " baking dish. Mix ingredients thoroughly; pour into prepared pan. Bake for approx. 30 min. or until cake-like and toothpick insrted comes out clean.
Cut into squares. Serve warm.
