Baked Pineapple Toast

1/2 C unsweetened applesauce
1 C dark brown sugar - firmly packed
28 ounces crushed pineapple - drained
8 slices white bread or whole wheat bread - crusts removed
4 egg whites
1 1/2 C skim milk

Combine applesauce, brown sugar and pineapple in a 9x13 baking pan and spread it on the bottom of the pan. Cut the bread slices in half to make "sticks." Top with the bread "sticks."

Mix the egg whites and milk, then pour over the bread. Set aside for 30 minutes before baking.

Bake uncovered at 350 degrees for 20-25 minutes. Serve with maple syrup. (This can be made the night before and put in the refrigerator until ready to bake.)
