Banana Bread With Chocolate Chips

A yummy loaf bread for any time of the year. Once your bananas get a little too ripe, just save them for this bread with a touch of sweetness with the chocolate chips. Peel and freeze bananas for later use. Guests of all ages love this bread! Ingredients: 1 1/2 C flour 1 t baking soda 1 t baking powder 1/4 t salt 3/4 C semisweet choc chips 3/4 C walnuts, chopped (optional) 1/2 C unsalted butter or 1/2 C canola oil 1 C sugar 2 large eggs 1 C mashed ripe bananas (2-3 bananas) 2 T fresh lemon juice 1 1/2 t vanilla extract 1/3 C coconut (optional) Directions: Butter (or Pam) and flour a 9" loaf pan. If you use smaller, multiple loaf pans, adjust the cooking time accordingly. Combine dry ingredients (flour, soda, powder, salt) in a separate bowl. Combine chocolate chips, nuts, coconut in another bowl; add a bit of flour mixture and mix. Beat sugar and butter until creamy. Beat in eggs, one at a time. Add lemon juice and vanilla, then mashed bananas. Add flour mixture, blend well, then other dry ingredients (choc chips plus nuts and/or coconut). Blend briefly. Pour into prepared loaf pan(s). Bake for approximately 1 hour (in 9" loaf pan, less for multiple smaller pans). Cool on open racks. Serve warm or wrap in foil and store at room temperature for several days.
