Ingredients: 1 1/4 c all purpose flour* 2 tsp baking powder 1 tsp cinnamon 1/4 tsp salt 1/8 tsp nutmeg dash cloves dash ginger 1/4 c brown sugar 3/4 c buttermilk 1 t canola 1 1/2 tsp vanilla 2 large eggs, slightly beaten 1/4 c chopped walnuts, toasted and cooled 2 c grated carrots 1/2 c raisins 1/4 tsp nutmeg 1/2 tsp cinnamon Directions: Whisk together 1 1/4 c all purpose flour* 2 tsp baking powder 1 tsp cinnamon 1/4 tsp salt 1/8 tsp nutmeg dash cloves dash ginger Combine in a separate bowl 1/4 c brown sugar 3/4 c buttermilk 1 t canola 1 1/2 tsp vanilla 2 large eggs, slightly beaten Combine wet and dry ingredients and stir just until moist Combine and gently fold in 1/4 c chopped walnuts, toasted and cooled 2 c grated carrots 1/2 c raisins 1/4 tsp nutmeg 1/2 tsp cinnamon Serve piping hot with your favorite maple syrup *recipe successfully made for our gluten free guests using one of the many gluten free baking mixes. simply follow the package instructions adding the spice, carrot and raisin mix as the last step.
