Banana Nut Bread

Banana Nut Bread is a great bread for breakfast or as a snack.

1/2 cup vegetable oil
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed thoroughly to a pulp
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons milk
1/2 teaspoon vanilla
1/2 cup nuts, chopped

Beat vegetable oil and sugar together.

Add eggs and banana pulp and beat well.

Sift flour, soda, baking powder and salt. Add to first mixture alternately with mixture of milk and vanilla. Beat well and stir in nuts.

Bake in a greased loaf pan, lined on bottom with wax paper cut to fit, for 1 hour.
