Blueberry And Pecan Muffins

Description: The pecans give a Southern accent to these classic muffins. Ingredients: Dry Mixture 11/2 cups regular (not self-rising or bread) flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1/4 tsp salt Fruits and Nuts 1 1/2 cups blueberries 1 cup pecans (halves or quarters) Liquid Mixture 1 stick unsalted butter, melted 1 beaten egg (fork) 1/2 cup buttermilk (Substitute: Milk with 1 drop lemon or lime juice) Directions: Mix the ingredients of the dry mixture in a mixing bowl; add the fruits and nuts. Mix the ingredients of the liquid mixture in a separate bowl, then add to the dry mixture all at once. Stir just until the two are well mixed, but the batter is still lumpy. Grease muffin tin with vegetable oil or line with paper bake cups. Fill level with batter. Sprinkle 1/4 tsp brown sugar on each muffin. Bake in pre-heated oven at 375 degrees 15-20 minutes.
