Blueberry Strata

15 slices white bread, cubed
8 oz cream cheese
1 C fresh or frozen blueberries
8 eggs
2 C milk
1/3 C maple syrup
Cinnamon to taste

1 C sugar
2 T cornstarch
1 C water
1 C Blueberries
1 T butter or margarine

In small saucepan, mix sugar and cornstarch. Add water, and bring to boil for 3 min. stirring occasionally. Stir in blueberries, reduce heat and simmer 8-10 min. Stir in butter until melted. Serve over Strata. Makes 1 3/4 C sauce.

*Try Strawberries, Raspberries, or Blackberries too. Sauce is great over pancakes and French Toast.

Place 2/3 bread cubes in greased 13x9 baking dish. Cut cream cheese in small cubes and dot over bread. Top with blueberries and remaining bread. In large bowl beat remaining ingredients and pour over bread. Cover and refrigerate overnight. Cover and bake at 350 for 30 min.; uncover and bake additional 30 min. or more until golden brown and center is set. Remove from oven and let set 5-10 min. before serving.
