Bonnie's Bread PuddingDescription: We bake our own organic bread daily. This recipe allows us to make use of left-over bread, and adds a sweet offering at breakfast. Ingredients: Cube 5 cups of day-old bread. Soak in 4 cups warm milk, with 1 cup raisins & 1/4 t. salt (about 10 minutes). Beat well: 4 eggs Add 1/2 c. sweetener (brown sugar or honey) Add 1 t. vanilla 1 t. cinnamon (optional) Directions: Blend egg and bread mixtures together. Add apples, seeds, nuts, etc., as desired. Pour into 9x13" pan. Bake at 350 for about 45 minutes, until golden brown. Serves up to 12. Sweet Creamy Topping (optional): In a saucepan combine: 1/4 cup of flour 1/2 cup of sugar pinch of salt 1 & 1/2 cup of milk Heat and stir until thick. In a bowl crack 6 egg yolks. Stir until blended. Then pour some of the hot mixture into the egg yolks and stir. Then, pour back that mixture into the pan and cook until it thickens. Let cool, then use whatever flavoring you like (vanilla, almond, maple, lemon etc). After it has cooled, beat 1 cup whipping cream and fold into the mixture. Pour on top of the bread pudding. Enjoy!
