Description: Fluffy buttermilk waffles, layered with mascarpone and berries, Yummy! Ingredients: Waffles 4 1/2 cups all-purpose flour 5 tablespoons sugar 1 1/2 tablespoon baking powder 2 1/4 teaspoons baking soda 1 1/2 teaspoon salt 5 large eggs 4 3/4 cups buttermilk 9 tablespoons unsalted butter, melted Pam Mascarpone Cream 1 8-ounce container mascarpone cheese or one 8-ounce package cream cheese, room temperature 1/2 cup sugar 1 tablespoons brandy 2 teaspoons vanilla extract 1 cup chilled whipping cream Mixed Berry Sauce 12 ounce bag frozen mixed berries 1 1/2 cups pure maple syrup Garnish Whip Cream Powdered Sugar Directions: Waffles Sift together flour, sugar, baking powder, baking soda, and salt. Whisk eggs in a large bowl until blended. Stir in buttermilk and melted butter. Stir dry ingredients into liquid mixture just until smooth. Spray a preheated waffle iron lightly with Pam and spoon batter in iron, spreading quickly. Cook waffles according to manufacturer's instructions, transferring as cooked to rack of a preheated 250 degrees F oven to keep warm. Serve with Mascarpone Cream and Mixed Berry Sauce. Garnish with whipped cream. Mascarpone Cream Using electric mixer, beat first cream cheese, sugar, brandy and vanilla in medium bowl to blend. Add 1/2 cup cream; beat until soft peaks form. Add rest of cream; beat until thick and stiff. Mixed Berry Sauce Thaw bag of frozen mixed berries. Mix with maple syrup and heat in 2 minutes bursts in microwave oven until warm.
