Start with fresh stone ground grits for this recipe as slow cooked grits have superior flavor. This dish can be served for breakfast, but also makes a great side dish and holds its own on a buffet. Experiment and play with additional herbs & such. Ingredients: 1 cup stone ground grits, uncooked 4 cups water 1 T. seasoned salt 1 stick butter or margarine 1 cup sharp cheddar cheese, grated 1 6 oz. Roll garlic cheese (spreadable cheese) or 1 6 oz. Jar cheese whiz and 1 T. garlic, minced 3 eggs "dash" of cayenne pepper (I use 1/4 t.) Directions: Cook the grits in the salted water until done, about 30-45 minutes. Once grits are cooked, then stir in the butter and cheese until it is melted. Mix the eggs with the cayenne pepper and add to the mixture. Pour into a buttered casserole dish. Bake at 350 degrees F for 45 minutes to an hour.
