Cherry Scones
Ingredients:
2 Cups All Purpose Flour 2 Tbls plus 2 tsps sugar 2 tsps baking powder 1/2 tsp baking soda 1/4 tsp salt 1/2 cup cold butter cut into pieces 3/4 cup buttermilk 1/2 cup dried cherries 1 large egg, separated Directions: Preheat the oven to 375 degrees. In a large bowl, combine flour, 2 Tbls sugar, baking powder, baking soda and salt. Add pieces of butter and work into the dry ingredients using a pastry cutter until the mixture resembles course cornmeal. With a fork, whisk together egg yolk with the buttermilk. Make a well in the center of the dry mixture and add the buttermilk/egg yolk mix, combining until the liquids are just barely absorbed. Turn mixture out onto a lightly floured surface and add the cherries. Knead until smooth and the cherries are incorporated. Place on an ungreased cookie sheet and flatten into approximately an 8 inch round. Using a sharp knife, cut the circle into 8 wedges. Beat the egg white lightly and brush the pastry liberally. Sprinkle with the remaining 2 tsps sugar and bake for approximately 25 minutes or until the scones are golden brown. Remove from the oven and serve warm or slightly cooled.
