Christmas Meringues

Easy to make, light and delicious to eat and festive looking

4 egg whites (1/2 cup) bring to room temperature
1 1/4 cup sugar
1/4 tsp. vanilla or peppermint extract
Additions: Choose any of the following: mini chocolate chips, crushed candy canes, red and green M&Ms….

Preheat oven to 300F. Lightly grease cookie sheet or use parchment paper. In large bowl of electric mixer, at HIGH speed, beat whites until soft peaks form when beater is slowly raised. Add sugar 2 tablespoons at a time, beating well after each addition. Continue beating until stiff peaks are formed.
Fold in your choice of additions.
Drop by heaping teaspoons 1 inch apart on prepared sheets. A very small scoop works well. Bake 25 to 30 minutes until lightly colored.
