Claude's French Onion Soup

French onion soup with a twist

4 lb. onions
California olive ranch Arbiquina olive oil
2 cups white wine
4 cups chicken broth
1 tbs. sea salt
2 tbs flour
fresh tarragon
Swiss cheese
French bread

Cut onions into 1/2" dice - it's important to have uniform pieces
Put onions into stock pot, cover with a thin layer of olive oil and saute until golden brown
Add flour and remove from heat for 10 minutes.
Add wine and broth and 1 or 2 tbs. tarragon
Simmer for about 1 hr.
Serve in bowls with a piece of toasted bread topped with grated cheese.
Bake in 400 degree oven until cheese browns - 2 to 3 min.
