A Frittata
Multi layers of potatoes, cheese, sausage, onions,herbs,topped with a fresh gringo salsa.

Yucon gold potatoes par boiled, cooled and grated herbs du Provence
Jack, cheddar, and swiss cheese
Bulk breakfast sausage
Balsamic vinegar
Extra virgin olive oil
Sea salt

Coat large oval baking dish with olive oil, 1" layer of grated potatoes sprinkled with sea salt and herbs du Provence. Next 1lb. grated cheese, then 1 1/2 lb. partially cooked sausage crumble a layer on cheese, another 1 lb. of cheese, 1/2 lb. of 3rd type of cheese. Next mix 17 eggs with 1 cup of 1/2 and 1/2.
Bake in 350* over 1 hr. Let stand for about 1/2 hr so the cheese sets up and is not runny.
Dice onions and tomatoes, chop cilantro, mix together in bowl, add salt a bit of olive oil and balsamic vinegar. Cut dish into 12 equal parts, serve on plate in center topped with the salsa and a dollop of sour cream and chives. English muffins and jam finish off the dish
