Corn and Lobster Chowder

Description: Fresh Maine lobster meat, potatoes and sweet corn in a delightful cream broth Ingredients: 2 oz Clarified Butter 8 oz Onions, finely diced 8 oz Celery, finely diced 2 lbs. Fresh corn, removed from cob 8 oz Roux 1 qt. Chicken stock 1 lb Red potatoes, skin on, cubed 1/2 tsp. White pepper 1/2 Tbsp. Salt 1 Bay Leaf 1/2 tsp. Thyme Leaf 1/4 cup, each Red and green peppers, finely diced 1 lb. Lobster meat, medium diced 3 cups Heavy Cream Directions: Combine onions, celery and clarified butter in a stockpot and sauté until tender. Add corn, stir and cover. Sauté gently until corn is cooked. Add chicken stock and bring to a boil stirring occasionally. Whisk in roux, turn off heat for 5 minutes. Turn heat to medium high and bring to a boil, stirring often. Add potatoes, spices and red and green pepper. Gently simmer until potatoes are cooked.
