Cranberry Biscuits
Description:
Cranberries are a local item on Cape Cod, so Cranberry jelly is available in many markets. This biscuit is great with a hot pepper cranberry jelly, served with some whipped cream cheese for an afternoon tea. Very different Ingredients: 1 cup cranberry jelly, or hot pepper jelly 2 cups flour 3 tsp baking powder 1/4 tsp baking soda 1 tsp salt 3 Tbsp shortening 1 egg, beaten 1/4 cup sour cream Directions: Sift flour, baking powder, soda and salt together. Cut in the shortening, or blend in a food processor. Break up the jelly slightly with a fork, and combine with the egg and sour cream. Stir to mix. Turn onto floured board and knead slightly, about 10 times. Cut into squares or circles. Bake at 400 for 15 -20 minutes. Sprinkle with grated cheese or brush with butter while hot.
