Description:
There is an old legend that says these cookies originated in Harwich, MA. We don't know for sure, but perhaps, because they keep well, and provide good nutrition for those long days at sea! Today, they are great with mulled cider when guests arrive! Ingredients: 1/2 cup raisins 1/4 cup dried cranberries 3 Tbsp candied orange peel 1/4 cup walnuts, chopped 4 Tbsp Butter 1/2 cup sugar 1/2 tsp salt 2 eggs, beaten 1/2 cup molasses 2 cups flour 1 tsp baking soda 1/2 tsp baking powder 1 tsp cinnamon 1/2 tsp cloves 1/4 tsp mace 1/4 tsp nutmeg Directions: Combine raisins, cranberries, orange peel, and walnuts, chop fine in food processor. Mix in 1/4 up of the measured flour, set aside. Cream the butter and sugar. Add the salt, eggs, and molasses, mix well. Sift dry ingredients, and add to liquid. Beat well, stir in floured fruits and nuts. Spread in strips of 2 to 3" wide, and about 1/4" thick on parchment lined cookie sheets, lightly sprayed with cooking spray. Bake at 350 for about 15 minutes. Cut into diagonal bars for a traditional cookie.
