Cranberry Orange Couscous
Description:
Truly a change of pace for breakfast! Ingredients: 1 cup skim milk or almond milk 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp allspice 1 cup couscous 2 tblsp raisins or currents 1/3 cup fresh orange juice 3/4 cup fresh or frozen cranberries 3 tblsp honey 3 tblsp water 1 or 2 medium oranges, peeled, sectioned and cut up or 1 can mandarin oranges 1-2 tblsp slivered almonds Directions: In a medium sauce pan, combine milk, cinnamon,nutmeg & allspice. Bring to boiling over medium heat. Add couscous and raisins/currents. Cover then remove from heat. Let stand for 5 minutes. Stir in orange juice and fluff with a fork. Meanwhile, in a small pan stir together cranberries, honey and water. Cook over low heat for 4-5 minutes or until the cranberry skin begins to pop (frozen cranberries will not pop). Remove from heat and gently stir in orange pieces & almonds. To serve, spoon warm couscous into individual serving bowls. Top each with warm cranberry-orange mixture. Garnish with orange peel strips.
