Dried Cherry And White Chocolate Chip Muffins From A New Beginning Bed & Breakfast
Description:
Delicious muffins filled with dried cherries and white chocolate chips! A hint of almond extract adds a richness that is to be savored with each bite! Ingredients: 2 cups all-purpose flour 1/2 cup sugar 1/4 cup instant nonfat dry milk (you really need this!) 1 tablespoon baking powder 1 teaspoon salt 4 large eggs – room temperature 1/2 cup canola oil 1/4 cup unsalted butter – melted and cooled 2 tablespoons 1/2 & 1/2 or milk 1/2 teaspoon almond extract 3/4 cup dried cherries 3/4 cup white chocolate chips Directions: Preheat oven to 400 degrees / prepare a muffin pan with paper liners. Mix flour, sugar, nonfat dry milk, baking powder, salt, cherries and chips in large bowl. Using a wooden spoon, beat eggs, oil, melted butter and almond extract in a second bowl to blend well. Stir egg mixture into flour mixture only until just blended. Spoon batter into prepared muffin pan, filling each to top (I use an ice cream scooper – perfect cup size). Bake 18 to 20 minutes until lightly browned and sharp knife inserted in center of muffin comes out clean. Makes @ 10 muffins. These can also be used for dessert – heated, split and served with vanilla ice cream on top – YUM!
