Stuffed French Toast From A New Beginning Bed & Breakfast

Luscious slices of toasted bread that has been soaked in a mixture of eggs and half&half filled with lemon curd and cream cheese!

1 cup 1/2 & 1/2 (you can use regular milk) room temperature
5 large eggs room temperature
1/2 teaspoon almond extract
2 tablespoons brown sugar
2 tablespoons sliced almonds (optional)
1 large loaf French bread (or 2 smaller loaves)
1 10 oz. jar lemon curd
6 oz. Neufchatel cream cheese (1/3 less fat) room temperature
1 tablespoon lemon juice
Powdered sugar (10X)

Mix first 4 ingredients until well blended be sure that the yolks are beaten well. Set aside.
Toast almonds in a frying pan on the stove or in a 350 degrees oven for @ 5 minutes or until lightly browned.
Blend lemon curd, cream cheese and lemon juice until smooth. Slice bread on an angle about 1 inch thick then slice down the middle of each slice (being careful not to slice all the way through cut straight down). Spread cheese and lemon mixture in the middle of each slice. Dip the slices in the egg mixture, counting to 3 for each side and place on a hot griddle pan that has a bit of melted butter on it. Let cook for @ 4 minutes on each side depending on how hot your pan is check after 3 minutes turn and cook other side. Place on a cookie sheet and put in a warm oven (300 degrees) until ready to serve but no longer than 20 minutes! Sprinkle with powdered sugar and toasted almonds.
Serve with or without maple, blueberry or raspberry syrup.
NOTE: you may also use other preserves in place of the lemon curd
This can also be used for dessert heated and served with vanilla ice cream on top YUM!
