Eggs Benedict Casserole W/ Asparagus

Mouth watering savory dish of eggs, English muffins and asparagus.

3 English muffins, split & toasted
4 oz. Canadian bacon, cubed
1 bunch asparagus, cut in 2' pieces and blanched
6 eggs
1 qt whole milk
1 Tbsp whole grain Dijon mustard
2 tsp fresh tarragon, chopped
1 cup shredded Cheddar cheese

Preheat oven to 250 degrees.
Tear toasted muffins into small pieces. Place in greased 9 x 13 baking dish. Sprinkle bacon and asparagus over bread. In large bowl whisk eggs, milk, mustard, tarragon and salt & pepper to taste. Pour over asparagus. top with Cheese. Bake 1 hr. 10 min.. Let stand 5 min. Slice into 12 servings. You may omit bacon for a vegetarian dish.
