Description:
Favorite crustless egg and cheese pie - with a nod to our southwestern tastes! Ingredients: 6 eggs - well beaten 1 3/4 C Cottage Cheese 1 1/2 C Shredded Monterey Jack and Cheddar Cheese 1/3 C flour 1 Tsp Baking Powder 1/3 - 1/2 C diced green chilis - mild to hot 1/4 C diced pimento peppers Shredded mozzarella cheese to top. Optional: 1/2 Lb. cooked chorizo Directions: If using chorizo, brown thoroughly in fry pan and set aside. Preheat oven to 350 degrees. In large bowl beat eggs well, add cottage cheese, shredded cheese, flour, baking powder, chilis and pimentos. Mix well. Spray a 9.5" pie plate with Pam. Spread cooked choirzo in bottom of pan. Pour egg batter in pie plate - place in center of hot oven. Bake 55 minutes, top Eggs Casa with shredded mozzarella and return to oven for 5 additional minutes. Remove from oven and allow to cool slightly (5 min) before serving. Cut into wedges (6) and serve with ham (not necessary if optional chorizo is used), and a good salsa.
