Eggs Florentine



Description:
Host a brunch & impress your friends! Our guests at the Heritage Houes B&B rave! The easy-to-prepare creamy florentine mixture refrigerates well so you can prepare ahead of time. Then, on brunch day, simply fill the ramikins, add egg and bake. Voila!

Ingredients:
1/2 cup onion, minced
1/4 cup green onions, minced
1 large can (Family Size) Campbell's Condensed Cream of Mushroom Soup
2 c. Sour Cream
2 tbsp. Dijon Mustard
1/2 tsp. Tabasco
1 tsp. Dried Basil
1 tsp. Dried Oregano
2 cups Mozzarella Cheese
2 lbs. Chopped Frozen Spinach (defrosted & drained well - no moisture)
Grated Parmesan cheese to taste
Paprika to taste

Directions:
Mix together in large bowl: onions, soup, sour cream, mustard, tabasco and spices. Add cheese and spinach. Spray individual ramikans with Pam. Fill each ramikan 3/4 full of mixture (don't fill to top). Create indention in the middle of the mixture with spoon & crack 1 egg (sunnyside up) over the top (filling the indention). Heavily sprinkle with Parmesan Cheese & Paprika. Bake as directed and serve hot.

After baking, remove from ramikan (egg facing up). Serve over warmed 1/2 English Muffin.
