Frosted Banana Bars
Ingredients:
1/2 cup butter softened 1 1/2 cups sugar 1 cup sour cream 1 tsp. vanilla extract 2 cups all-purpose flour 1 tsp. baking soda 1/4 tsp. salt 1 cup mashed ripe bananas 2 eggs 6 oz. Cream Cheese 1/2 cup softened butter 2 tsp. vanilla 2 cups sifted powered sugar + 2 cups of powered sugar Directions: Preheat oven to 350. Line a 10X15 jellyroll pan with greased parchment paper. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Finally, mix in the mashed banana. Spread evenly into the prepared pan. Bake for 25-30 minutes in the preheated oven until a toothpick inserted into the center comes out clean. Allow bars to completely cool before frosting. Beat cream cheese, butter, and vanilla with an electric mixer until light and fluffy.Gradually add 2 cups of sugar, and then gradually beat in the 2nd 2 cups of powered sugar to make a frosting that is easy to spread.
