Filed under: Breakfast, Breakfast - Pancakes, Breakfast - Waffles.
Description: Great start to the day, and they will never guess that they are good for them. Whole Wheat flour, Oatmeal, Yogurt make these Waffles low in fat, and packed with nutrition without sacrificing taste. Ingredients: 2 C Organic All Purpose Flour 1 C Whole Wheat Flour 1 C Old Fashioned Oatmeal 1 TBSP Baking Powder 1/2 tsp Salt 1/2 tsp Baking Soda 4 C Yogurt 2 Whole Eggs Sauce: 2 C Strawberries 1 C Cranberries 1 C Blackberries 2 C Sugar 1/2 C Water Directions: Mix dry ingredients together. Beat eggs and yogurt together. Add yogurt mixture to dry mix and fold together. Be sure not to over-mix. Stop mixing when dry ingredients are almost all mixed in. Using a large bowl will help to not over mix. Let mixture set for 30 minutes. While this sets make sauce. Place all ingredients in a sauce pan. Cook over med-low heat until sauce has thickened. Best test is to take spoon that is used to stir mixture and draw finger across horizontally and hold there for a few seconds. If it does not run together it is done. Heat waffle iron and cook. DO NOT overload waffle iron, these expand a lot. Dress with sauce, sprinkle with powdered sugar and enjoy. Extra batter can be stored in refrigerator for up to 4 days. This also can be used to make pancakes. Recipe Summary: Yield: 10 Prep Time: 45 minutes Cook Time: 3-4 minutes Comments: Other recipes by Wakefield Inn: Rosemary Lemon Scone |
