Jalapeno Corn Quiche Muffin

“We discovered that we like the concept of a “muffin” quiche. Because I love spicy and savory and the combination together is wonderful! It has been one of my favorites throughout the years. If you do not like a lot of spice, just cut back on the

3 beaten eggs
2-1/2 cups milk
�1/2 cup canola oil
1 cup diced onion
1 cup creamed corn
3 cups corn bread mix
1-1/2 cups grated sharp cheddar cheese
�1/2 cup grated jack cheese
�1/2 cup diced jalapenos

Combine all of the above, pour into light oiled muffin tins

Bake at 325 degrees for 30 minutes. Makes 24 muffins.
