Macadamia Butter Crisps

Our locally grown macadamias make this super cookie for supper time.

1 cup soft butter
1 cup sugar
1 egg, separated
2 cups sifted flour.
1 tsp ground ginger
1 cup finely chopped Macadamia nuts.

Cream together butter and sugar. Beat in egg yolk.Add sifted flour and ginger into creamed mixture.Spread in even layer into a jelly roll pan ( 15X10) Beat egg white slightly and brush over surface. Make sure it is nice and smooth. Sprinkle on the Macadamias and press in. Bake at 275 degrees for 1 hour.
While still hot cut into 2 inch squares. Cool on rack.
