Mandarin Orange French Toast
Description:
An easy and mouthwatering fix-ahead and bake-in-the-morning treat for special weekend brunches or holidays. Ingredients: 8 oz. Cream Cheese, softened 4 Large Eggs 11 oz Can Mandarin Oranges 1/2 t Vanilla Extract 1/4 t Nutmeg 2/3 C Fresh OJ 1/3 C Milk 5 T Sugar 8 Slices Wheat Bread, trimmed 1/2 C Butter 32 Pecan Halves Directions: Prepare Filling: Soften 8 oz. cream cheese with 1 T of milk & 2 T of orange juice. Mix in 2 T of sugar and 1 egg. Prepare Dish: Melt butter in microwave in 8" x 8" casserole. Place four bread slices in bottom of dish. Spread cream cheese filling over bread, top with mandarin orange sections (about 8 per bread slice)and then the 2nd set of of bread slices. Mix remaining eggs & sugar, add & mix vanilla, nutmeg, then OJ, then milk, mix and pour over bread stacks. Arrange about 8 pecan halves on top of each bread stack. Cover and refrigerate 1 hour or overnight. Bake, uncovered in preheated 400 oven for 30 minutes or till golden. To serve, loosen edges of bread from pan sides with knife blade. Cut into individual bread size servings. Serve hot — Serves 4 hungry people. This is SOO easy, looks great with pecans on top and tastes yummy!
