Michigan Apple Muffins

Description: Bike rides past the many orchards will whet your appetite for a variety of apple delights. The following muffin recipe is a favorite of guests at the White Swan Inn Ingredients: 1-1/3 cups all-purpose flour 1 cup quick-cooking or old-fashioned oats 2/3 cup sugar 1 tablespoon baking powder 1-1/2 teaspoons ground cinnamon 1/2 cup milk 1/3 cup butter, melted 1/4 cup maple syrup 1 egg, lightly beaten 2 cups chopped peeled Michigan apples ICING: 1/3 cup powdered sugar 2 tablespoons maple syrup Directions: Preheat oven to 400 degrees. In a large bowl, combine dry ingredients, mix well. In a small bowl, combine liquid ingredients. Then stir into dry ingredients just until moistened. Fold in apples. Fill paper-lined muffin cups three-fourths full. Bake at 400 degrees for 18-20 minutes or until muffins test done. Remove to wire rack. Cool completely. For icing: mix powdered sugar and syrup.
