Mom's Lemon Curd

3 eggs
1 cup sugar
1/2 cup lemon juice
1/4 cup melted butter
1 tablespoon lemon peel

Use a double boiler and place egg and sugar under low heat whisking until everything is incorporated. Stir in juice and peel. Cook over medium high heat until curd begins to thicken. Stir in butter and whisk until butter melts. Remove from heat and chill.
