Omelet WaffleIngredients: 2 Medium Eggs 3 Tbsp. Milk 1 Tbsp. Shredded Mozzarella Cheese 1 Tbsp. Chopped Red Peppers 1 Tbsp. Chopped Broccoli 1 Tbsp. Breakfast Sausage Slices Directions: Preheat waffle iron and grease with spray oil on both top and bottom. Whisk eggs and milk in a medium bowl. Stir in remaining ingredients. When waffle iron is hot, slowly pour in egg batter. Be careful not to fill up too much. There should be a thin layer of egg batter across the entire surface of the bottom iron but if you try to pour too thick of a layer, it will just leak out the sides when you close your iron. Depending on the depth and size of your waffle iron, you may have a little liquid left over to make a partial second omelet.
