Pumpkin Apple Walnut Muffins With Streusel Topping

This hearty muffin celebrates autumn with pumpkin, Granny Smith apple and walnuts. Ingredients: 1 cup whole wheat pastry flour 1 1/2 cup unbleached flour 1 cup sugar 1 tsp baking powder 1/4 tsp salt 1/2 tsp cinnamon 1/4 tsp cloves dash fresh ground nutmeg 2 eggs 1 cup canned pumpkin 1/2 cup vegetable oil 1 tsp vanilla extract 1 Granny Smith apple, peeled and small dic 1/2 cup chopped walnuts Directions: Streusel topping: 2 Tbsp flour, 1/4 cup brown sugar, 1/2 tsp cinnamon, 1 Tbsp cold butter, cut up. In small bowl, combine flour, brown sugar, cinnamon. Cut in butter with pastry cutter until crumbly. Chill while making muffins. Sprinkle lightly over muffins before baking. Preheat oven to 350. In large hand mixing bowl, combine eggs, pumpkin, oil, vanilla. Stir in flours, sugar, baking powder, spices, until mixed well. Stir in apples and nuts. Spoon batter into greased or paper-lined muffin tin, filling about 3/4 full. Sprinkle with topping.
