Cakelike texture - a Thanksgiving favorite Ingredients: 2 1/2 cups all-purpose flour combined with 1/2 teaspoon baking soda and 1/4 teaspoon salt 1 tablespoon pumpkin pie spice 3/4 cup packed dark brown sugar 1/2 cup granulated sugar 3/4 cup soft butter (1 1/2 sticks) 1 large egg 1 cup pumpkin puree (not pie filling!), canned or fresh 1 teaspoon vanilla extract 1 cup golden raisins (or regular raisins) 1/2 cup chopped macadamia nuts (or other nuts will do) Directions: Preheat oven to 325 degrees. Combine flour mixture with pumpkin pie spice. Using electric mixer on medium speed, combine brown and granulated sugars. Beat in butter. Add egg, pumpkin, and vanilla. Beat until well mixed, light and fluffy. Stir in flour mixture, raisins and macadamia nuts. Drop by round spoonfuls onto ungreased cookie sheets, 2 inches apart. Bake until slightly browned along edges, about 20 minutes.
