Quinoa Granola
Description:
Gluten-free Breakfast Treat or Healthy Snack Ingredients: 4 cups or 1 box of quinoa flakes 1 1/2 cups of sliced almonds(optional) 1 cup coconut(optional) 1/2 packed light brown sugar 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 cup vegetable oil(canola or sunflower) 1/4 cup honey 1 teaspoon GF vanilla 1 1/2 cups raisins or dried cranberries Directions: Set oven rack on 3rd level from bottom. Preheat oven to 250'F. Line a jelly roll pan with parchment paper. In a small bowl, whisk oil, honey, salt, and vanilla. Set aside. In a large bowl, toss together flakes, almonds, coconut, brown sugar, and cinnamon(raisins or cranberries are in last step). Fold oil mixture into dried mixture until combined. Spread mixture evenly over baking sheet and bake, stirring every 15 minutes until golden brown for about 50 minutes. Remove pan from the oven and allow to cool on a wire rack. When cool, stir in raisins/dried cranberries. Store in an air-tight container in the freezer when not eating it.
