Rice Casserole
Description:
I'm always looking for something new as a breakfast side dish, and found that the combination of flavors in this casserole serves equally well at breakfast or dinner. It also freezes well. Ingredients: 1 c white or brown rice cooked until tender in 2 c chicken broth 1 medium onion chopped 2/3 c fresh sliced mushrooms 1/2 c raisins soaked in 1/2 c orange juice 1/2 c slivered almonds 1/3 c sour cream 1 1/2 tsp corn starch (use as optional thickener) salt and pepper to taste Topping: 1 1/2 c Rice Krispies crushed and coated with 1 1/2 Tbsp melted butter Directions: Sauté onion and mushrooms in butter while raisins soak. Then add all casserole ingredients to the cooked rice in the rice pot, thickening with corn starch if needed. The casserole may be cooked all at once in a 2 qt greased dish, or divided into individual ramekins for freezing and later use. Either way, cover with topping and heat at 350 degrees for 40 minutes.
