Scrambled Eggs With Chives

16 eggs, lightly beaten
3 ounces goat cheese, softened
3 ounces cream cheese, softened
1/4 cup chives, chopped
1/2 cup butter, softened
Salt and pepper to taste

Whisk the eggs and the cheeses together in a medium bowl and season with salt and pepper. Melt the butter in a large skillet over medium low heat. Add the egg mixture and cook slowly, stirring constantly with a rubber spatula until the eggs are set as desired. 10 15 minutes. Stir in the chives and serve at once on warmed plates.
