Smoked Salmon Fritata
Description:
Made with locally smoked salmon and sheep cheese, this recipe highlights local products. Ingredients: 8 eggs 1/4 C milk 1/4 C chopped, fresh chives 1/4 C chopped, fresh basil 1/2 t pepper dash salt 2 t olive oil 2 oz crumbled, cold sheep's cheese (cream cheese also works) 3 oz thinly sliced, smoked salmon, chopped Directions: Preheat broiler, or oven to 400 degrees. Whisk together first six ingredients. Heat the oil in a 10" oven-proof, nonstick skillet until hot, but NOT smoking. Add egg mix and scatter cheese over top, then cook for 3-5 minutes, until the egg is almost set, but still moist on top. Sprinkle salmon on frittata, and press into the eggs. Broil about 6" from flame until set, slightly puffy, and golden on top, 1-2 minutes, or bake for ~15 minutes. Cool 5 minutes, then carve and serve.
